A method for obtaining a coffee includes heating an extraction fluid so as to induce the passage of the extraction fluid through a dose of coffee to obtain the beverage, and separating a fraction of the beverage obtained with a prevalently liquid phase of the extraction fluid from a further fraction of the beverage obtained with a prevalently steam phase of said extraction fluid.
