    Abstract: PURPOSE: An Eriobotryae Folium liquor is provided to ensure excellent functionality, to suppress alcoholic liver injury, and to be used as a health functional liquor. CONSTITUTION: A method for manufacturing an Eriobotryae Folium liquor comprises: a step of adding seed malt to steamed and pulverized rice and preparing ipguk (Japanese koji); a step of adding yeast to ipguk and fermenting to obtain crude liquor; a step of adding water to crude liquor and fermenting to prepare a first fermented liquor; a step of adding water to the first fermented liquor and fermenting to prepare a second fermented liquor; and a step of maturing the second fermented liquor. One of the fermentation or maturing steps is performed using an Eriobotryae Folium extract or an Eriobotryae Folium fermentation.
