Abstract: 본 발명은 새우젓의 새로운 가공방법에 관한 것으로, 특히 장시간 동안 동일한 품질을 유지할 수 있고 보관이 편리하며 염도가 낮고 맛과 기호도가 좋은 새우젓케첩 조성물 및 그 제조방법에 관한 것이다. 본 발명의 새우젓케첩 조성물은 염수가 혼합되고 껍질이 제거된 새우젓액과, 녹말가루 또는 곡물가루, 그리고 부재료로 향신료, 채소류, 버섯류 등을 포함한다. 본 발명의 새우젓케첩의 제조방법은 새우젓에 염수를 혼합하고 껍질과 이물질을 제거하는 단계; 여기에 밀가루 또는 곡물가루를 혼합하고 가열하는 단계; 및 향신료, 채소류, 버섯류 등의 부재료를 첨가하는 단계를 포함한다. 본 발명의 새우젓케첩은 새우젓 특유의 냄새와 높은 염도로 새우젓을 꺼리던 사람들도 쉽게 먹을 수 있도록 냄새와 맛이 좋아지고 염도는 저하되었으며, 종래의 새우젓과 달리 동일한 맛과 향을 장시간 유지할 수 있고, 보관 및 사용이 편리하며, 부드러운 질감으로 먹기 편하다.
