PROBLEM TO BE SOLVED: To obtain a liqueur type liquor having a cherry red color and excellent flavor and qualities by adding alcohol and a saccharide to a color matter solution (treated material) prepared by extracting the seed coat of peeled soybean with an acid solution. SOLUTION: The seed coat of peeled soybean such as black soybean, yellow soybean, etc., is extracted with a solution of an acid such as citric acid, malic acid, lactic acid, succinic acid, fumaric acid, tartaric acid, ascorbic acid, etc., to prepare a coloring matter solution. The prepared coloring matter solution (treated material) is mixed with alcohol and a saccharide such as glucose, fructose, sucrose, maltose, oligosaccharide, honey, etc., to give a liqueur type liquor. Preferably the coloring matter solution (treated material) is blended with yeast, the saccharide and, if required, alcohol and fermented to produce a liquor of fermented liquor type.
