Abstract: An apparatus for removing or separating the layer of fat from chops comprises a knife 12, curved in accordance with the curvature of the layer of fat, and a support for the chops. The knife and the support are movable with respect to each other in the longitudinal direction of the chops. The support comprises a continuous conveyor belt 3 of elastic material provided with knubs 4. The knife 12 is in the form of an arc of a circle pivotable about its centre of curvature in a plane perpendicular to the direction of movement of the conveyor belt by means of a driving device. A clamping device 23 for the chops is disposed before the knife above the conveyor belt. A first driven conveyor roller 33 is disposed above the conveyor belt upstream of the chop clamping device to assist forward movement of the chop and a second driven conveyor roller 34 is disposed above the conveyor belt and downstream of the knife whereby the chop is stretched to prevent formation of corrugations.
