Abstract: A method of manufacturing onion juice by sterilizing onions with steam and grinding it is provided to remove the onion toxicity and smell while retaining various nutrients as it were. An onion beverage without a possibility of deterioration by rancidity is prepared using onion juice. An onion is peeled, and the peeled onion and onion skin are sterilized with steam for 10 to 20min. The steamed onion is cut up into specific size piece and ground. The ground onion juice is mixed with the onion skin and extracted onion juice, heated at 100deg.C for 2 to 5hr, filtered and packaged. An onion beverage contains 50% by weight of onion juice, 45% by weight of water and 5% by weight of additives selected from honey, fructose, citric acid, vitamin C, fruit juice, sugar and its mixture.
