    Abstract: PURPOSE: Provided are derivatives of conjugated linoleic acid(CLA), such as triglyceride derivatives, ascorbic acid derivatives, D-glucose derivatives, cyclodextrin microcapsules, phospholipid derivatives, which have higher functionality and can be used for food additives. CONSTITUTION: The cyclodextrin microcapsules of CLA are synthesized by a process comprising the steps of: dissolving 1.4pts.wt. of the CLA in 40pts.wt. of ethanol and adding 10-40pts.wt. of distilled water and 1-4pts.wt. of cyclodextrin and stirring and reacting at 60-80deg.C for 1-10 minutes; cooling the resultant till the temperature of 4-20deg.C for 0.5-5 hours and then removing the solvent by a vacuum refrigeration drying or a spray drying.
