본 발명에 따른 카테킨 프리 차수는 가공되지 않은 생찻잎을 증열처리하여 효소 불활성화시키고 찻잎에 포함된 카테킨을 제거하여, 화장료 또는 의약 조성물에 포함할 경우 차수가 산화되는 것을 방지할 수 있다. 따라서 본 발명에 따른 상기 차수를 포함하는 조성물이 이취 및 변색되는 것을 방지할 수 있으므로, 식품 분야뿐만 아니라 화장료, 의약 등 다양한 산업분야에서 안정적인 활용이 가능하다. 또한, 생찻잎에 포함된 피부 유용성분들을 풍부히 함유할 수 있어 우수한 피부 장벽 기능 회복 또는 피부 보습 효과를 제공할 수 있다.

The present invention relates to green tea with a rape flower flavor having excellent palatability and a production method of same, and more specifically, to green tea with a rape flower flavor having excellent palatability by coating green tea produced by an announced method with the rape flower flavor and mixing rape flower petals with the coated green tea, and a production method of same. According to the present invention, a flavor which a user could not feel from existing green tea is expressed by offering the rape flower flavor to the single taste of the green tea, and the unique fresh flavor and astringent taste of the green tea are masked, thereby providing the green tea with the rape flower flavor with improved palatability.

A strain of the Lactobacillus plantarum APsulloc 331266 has acid resistance at pH 2.5-4.5 for 0.5-5 hours. The strain has lactic acid productivity. The strain produces lactic acid with 70% or less of type D among lactic acid. A composition contains the strain or a culture medium thereof. The composition is a fermented food composition.
