    Abstract: PURPOSE: Microorganism fermented green tea, and a producing method thereof are provided to offer an oxygen-resistant effect, an anti-obesity effect, and an anticancer effect to users. CONSTITUTION: A producing method of microorganism fermented green tea comprises the following steps: preparing fresh green tea leaves; deactivating polyphenol oxidase through a freshness reducing process of the green tea leaves; rolling and roasting the tea leaves; secondly rolling the tea leaves before drying; injecting mixed microorganisms including aspergillus niger, saccharomyces cerevisiae, and acetobacter aceti subsp. xylinum into the dried tea leaves; packing the tea leaves injected with the mixed microorganisms before burying under sterilized sand or yellow soil, and fermenting the tea leaves at 25-35 deg C.
