Abstract: 본발명은빙과류또는얼음을이용한식음료형태인일명, 샤베트또는이와유사한형태의빙과식품을제조하는데사용되는얼음및 그제조방법에관한것이다. 종래의경우빙과식품을제조하는데사용되는식용얼음은단순히정제살균수만을냉동시킨형태로서이는반드시얼음가루와토핑재료를혼합하여함께섭취하여야만나름대로의맛을느낄수있고, 얼음가루자체만으로는섭취하기곤란하여빙과식품으로서의본질을충족시킬수 없는단점이있다. 본발명은정제살균수 77.7 내지 85.7 중량%, 분유 7.8 내지 12.5 중량%, 정백당 4.7 내지 9.4 중량% 및첨가제 0.2 내지 0.4 중량%를혼합한혼합액을급속동결하여얻어지는얼음과이를제조하는방법을제공하여얼음자체에별도의부드러운맛과필요시향을가미하여미각적으로나시각적으로나름대로의특성을가질수 있으며, 부가적으로토핑물에의한다양한형태의빙과식품의연출이가능하게되고, 기존의아이스크림이갖는부드러운시각적특성및 고유의맛을갖는장점과기존의팥빙수가가지고있는시원한청량감과함께, 얼음을얇게깎아낸설편(雪片) 형태로활용하되, 그고유의빙결(氷潔)형태를오래유지할수 있어, 얼음을이용한빙과식품분야에서다양하고도널리활용할수 있는데 그특징이있다.

Abstract: PURPOSE: A method for manufacturing sauce for sliced raw fish is provided to improve taste of sliced raw fish using the sauce prepared by mixing hot pepper paste as a main ingredient with other additives like coarse powdered hot pepper, toenjang, sugar syrup, hot pepper seed, thick salt, honey, soupbone broth, soy sauce, black oak charcoal, glacial acetic acid and glutinous rice starch. CONSTITUTION: The method comprises the steps of: adding two black oak charcoal to 200-250wt.pts. of soupbone broth and boiling the broth; boiling again and cooling with adding 15-20wt.pts. of hot pepper paste, 7-10wt.pts. of toenjang, 2-3wt.pts. of hot pepper seed and 2-3wt.pts. of honey, and fermenting at 10deg.C for 30days; diluting the fermented liquid with 38wt.pts. of sugar syrup, 10wt.pts. of thick salt, 400mL of glacial acetic acid and 1-2wt.pts. of soy sauce; adding 500g of glutinous rice starch to control the concentration of the sauce and fermenting at 10deg.C for 30days.
