    Abstract: 본 발명은 밀가루, 드라이이스트, 토마토, 올리브유, 모차레라치즈 등 피자식품 소재에 분말 청국장과 양파, 목이버섯, 가지를 이용한 기능성 피자제조방법으로 본 발명은 밀가루 강력분 100분량에 드라이이스트와 소금, 설탕을 섞고 38~40℃의 온수로 1차 반숙을 하고 올리브 오일을 넣고 10분 정도 2차 반죽을 한 후 따뜻한 곳(25~28℃)에서 45분정도 발효시킨다.
    발효된 피자도(dough)에 물에 살짝 불린 말린 가지와 홀토마토를 소스재료로 첨가하고 250℃로 예열된 오븐에서 6분 동안 구워 소스를 만든 후 얇게 채썰은 양파와 분말 청국장을 잘 섞어서 얇게 썬 목이버섯, 빨강 피망과 같이 토핑재료로 피자소스에 바르고 그 위에 모차레라치즈를 얹고 파르메산 치즈가루를 뿌리고 다시 오븐에 넣고 5분 정도 지나 치즈가 녹아서 갈색이 되면 꺼내서 바질이나 다진 파슬리잎을 얹어서 먹을 수 있게 만든 기능성 피자 제조방법이다.
