Abstract: A food additive comprising Physalis alkekengi extract is provided to show excellent tyrosinase inhibiting activity during in vitro experiment as well as melanin synthesis-inhibiting activity using an animal cell line of Melan-A. A food additive comprises 0.1-50wt% of Physalis alkekengi extract showing a whitening effect. The Physalis alkekengi extract can be used for at least one food selected among dried fruit products, fruit juices, vegetable juices, noodles, agricultural processed foods, marine processed foods, dairy products, fermented milk foods, grain products, microorganism fermented foods, seasonings, meat processed products and the like. A method for preparing Physalis alkekengi extract comprises the following steps of: mixing Physalis alkekengi and a solvent; performing hot-water extraction, reflux extraction, immersion extraction or pressure extraction at 10-100‹C for 1-4 days; and centrifuging, vacuum-filtering, concentrating and freeze-drying the extract. The solvent is one or more materials selected from the group consisting of water, ethanol, methanol, propanol, butanol, acetone, ethylacetate, hexane, butylene glycol, propylene glycol, hydrated butylene glycol, hydrated propylene glycol and hydrated glycerin.
