Abstract: A method for preparing steamed rice cake with beans is provided to prevent the quality of the steamed rice cake from being deteriorated due to the use of amylase or starch acetate in a kneading process. A method for steamed rice cake with beans comprises: (i) soaking nonglutinous rice in water; (ii) grinding the soaked nonglutinous rice to make nonglutinous rice flour; (iii) adding distilled liquor(20% alcohol) to the nonglutinous rice flour during or after the grinding step; and (iv) making bean flour, laying the bean flour and the nonglutinous rice flour by turns, and then steaming. In the step (iii), the distilled liquor is added at a level of 16~20wt%, based on the weight of the nonglutinous rice flour. In the step (iv), the bean flour is made by soaking 30wt% of beans (based on the weight of the nonglutinous rice flour) in water, dehydrating, peeling, steaming for 60min, and grinding.

Abstract: A preparation method of steamed rice cake with red beans is provided to impart a soft texture to the steamed rice cake without enzyme or starch in a kneading process.
