Abstract: PURPOSE: A method for manufacturing citrus wine is provided to ensure similar preference with citrus wine of long maturing period. CONSTITUTION: A method for manufacturing citrus wine comprises: a step of preparing citrus juice; a step of adding sugar and green tea to the citrus juice; a step of inoculating Saccharomyces cerevisiae to the citrus juice and fermenting under anaerobic condition; and a step of maturing the citrus wine at 10°C.
