Abstract: A method for preparing chocolate containing a concentrated medicinal herb extract is provided to increase the shelf life of a medicinal herb extract and enhance consumer preferences for medicinal herbs. A method for preparing chocolate containing a concentrated medicinal herb extract comprises the steps of: (a) pulverizing medicinal herbs and performing hydrothermal extraction with water at 130‹C for 24hr, vacuum-filtering the extract, and concentrating the filtrate to obtain a concentrated medicinal herb extract, wherein the volume ratio of the medicinal herbs and the water is about 1:1~40; (b) washing the inside of a round or ball-shaped packing chocolate with liquor having an alcohol content of 35~45%; (c) putting the concentrated medicinal herb extract in the packing chocolate; (d) refrigerating the chocolate made in the step (c) at about 1~5‹C for 10~20min; (e) sealing up the packing chocolate with a chocolate cover; (f) making at least two holes in the sealed chocolate with a tool such as a needle, and leaving the chocolate as it is at room temperature for about 20~30min; (g) putting the packing chocolate in a double boiler at about 70~90‹C, and melting it to 45‹C or below; (h) coating the chocolate made in the step (c) with the packing chocolate melted in the step (g); and (i) hardening the chocolate made in the step (h) on oilpaper for food, followed by decorating.
