Abstract:
The present invention relates to chocolate including a mulberry extract and/or mulberry powder. According to the present invention, provided is chocolate including a mulberry extract or mulberry powder, as a result of a research on changes in functional characteristics in accordance with additives added to chocolate during the manufacturing process. Moreover, provided is a method for utilizing mulberries which used to be entirely discarded and not used industrially.
