Abstract: A bitter taste-masked red ginseng composition and a preparation method thereof are provided to effectively mask the bitter taste of red ginseng in order for a consumer to easily take the red ginseng by mixing vacuum-concentrated red ginseng and rice extract. A bitter taste-masked red ginseng composition contains 0.1-99wt% of red ginseng concentrate and 1-50wt% of rice extract. The mixing ratio of the red ginseng concentrate and rice extract is 10 to 1~5. The sugar content of the rice extract is 50-100Brix. The red ginseng concentrate additionally contains 1-10wt% of rice bran oil on a total weight basis of the red ginseng composition. The red ginseng concentrate is obtained by mixing red ginseng and an extraction solvent and filtering and decompression-concentrating the mixture. The rice extract is prepared by mixing rice and the extraction solvent, adding a liquefying enzyme and saccharifying enzyme to the rice and filtering and concentrating the saccharified rice.
