Abstract: The present invention provides a composition for preventing oxidation of animal fat comprising a fermented material of Leuconostoc mesenteroides A5. Moreover, an animal in which fat oxidation is suppressed, especially an animal with improved fat oxidation stability can be produced when the meat animal feeds on the composition for preventing fat oxidation as an ingredient of a feedstuff additive and a feedstuff composition. Therefore, meat of the meat animal can be stored or be distributed for a long period time and thus merchantability of the meat of the meat animal is enhanced.
