Abstract:
The present invention relates to a novel Acetobacter sp. SEA623-2 strain, citrus vinegar, and a method for manufacturing the citrus vinegar. The present invention relates to a citrus vinegar containing rich flavonoid ingredients using the strain. The citrus vinegar contains richer flavonoid ingredients such as naringenin and hesperetin than the case of using a strain for acetic acid fermentation when manufacturing existing brewed vinegar and is able to provide various health foods.
