    Abstract: PROBLEM TO BE SOLVED: To obtain a food having an excellent emulsification characteristic, etc., and has an improved flavor, texture and appearance by compounding phospholipid of a prescribed value or above in the sum of the ratio of phosphatidic acid and the ratio of phosphatidyl inositol with phospholipid composition. SOLUTION: For example, 100g soy bean lecithin is taken in a 1-liter beaker and is heated to 60 deg.C in a hot water bath, to which 500ml ethanol heated to 60 deg.C is added. The mixture is then stirred. The generated precipitate is recovered and is washed with the heated 500ml ethanol. The resulted precipitate is subjected to solvent removal. The phospholipid composition of >=0.72 sum of the ratio of the phosphatidic acid and the phosphatidyl inositol and further, >=1 in the ratio of the phosphatidyl inositol to the phosphatidic acid is obtd. The resulted composition is compounded with ice cream, etc., by which the desired food is obtd.

SOLUTION: This reducing agent for an unpleasant smell comprises a lipid having a negative charge (phosphatidic acid, phosphatidylinositol, etc.) or its salt (an Na salt, a K salt, etc.) as an active ingredient therein. An acidic phospholipid, its lyso derivative or a salt thereof is preferred as the lipid having the negative charge and can be extracted and separated from a soybean, an egg yolk, a wheat embryo, an animal organ or a plant tissue. The lipid or its salt having the negative charge in an amount of 0.001-50wt.% may be added to a medicine, etc., having the unpleasant smell.

    Abstract: PROBLEM TO BE SOLVED: To obtain a bitter-taste suppressing agent having excellent bitter-taste suppressing effect by using a fatty acid as an active component. SOLUTION: This bitter-taste suppressing agent contains an 8-24C saturated or unsaturated fatty acid and/or fatty acid metal salt as an active component. The fatty acid may be used as it is or in a state separated and purifiedby fractionation, distillation, etc. The fatty acid can be produced from an easily available raw material by conventional method such as the hydrogenation and saponification of an oil and fat derived from animal, or vegetable raw materials with an enzyme or by chemical synthesis. Bitter taste of pharmaceuticals, foods or cosmetics is effectively suppressed by compounding 0.1-10wt.%, preferalby 0.5-3wt.% of the bitter-taste suppressing agent based on the total weight of the pharmaceuticals, etc. Especially, the bitter taste of a food can be suppressed without changing the good palatability of the food.

    Abstract: PURPOSE: To simply and easily obtain a lipid mixture containing acidic phospholipids in high concentrations, useful as an emulsifier or a bitterness depressant by extracting a lecithin with acetone under acidic conditions. CONSTITUTION: Lecithin (suitably soybean lecithin of >=40% purity) is extracted with acetone under acidic conditions. Preferably, the lecithin is dissolved in hexane in an amount of 0.1-10v/w% and pH of the solution is adjusted to 1-4 with an acid such as hydrochloric or acetic acid. Then, the hexane phase is extracted with 1-20v/w% (based on the lecithin) of acetone. The acid treatment is preferably performed at 0-25 deg.C. The acetone extract is filtered to remove the insolubles, then acetone is removed from the filtrate to collect the objective acidic phospholipid concentrate. It is preferred than this lipid mixture contains phosphatidic acid and phosphatidylinositol totally in an amount of 60-85wt.% based on the total of the neutral phospholipids and the acidic phospholipids.
