Abstract: PURPOSE: An opuntia concentrate and a producing method thereof are provided to remove a removal process of the bitter taste generated by adding ethanol. CONSTITUTION: A producing method of an opuntia concentrate comprises the following steps: assorting and washing opuntia and Japanese apricot; mixing the washed opuntia and the Japanese apricot in a weight ratio of 18-20:1; adding water into the opuntia and Japanese apricot mixture in the amount 7-9 times larger than the total amount of the mixture, and extracting the mixture for 3-5 hours at 90-130 deg C using the pressure of 60-70psi; adding a pectinase fiber degradation enzyme into the obtained extract for reacting for 2 hours at 50-60 deg C, and deactivating the extract for 30 minutes 90-100 deg C; filtering the enzyme-processed extract using a 60 mesh filter and a diatomite filter; vacuum-concentrating the filtered extract into 10-20 Brix; and sterilizing the concentrate for 8-15 minutes at 90-100 deg C before measuring and packaging.
