Abstract: A method of sanitizing and destaining ware, including silverware includes the steps of applying a sanitizing concentrate composition to silverware at a rate of 100 ppm to 2000 ppm, the sanitizing concentrate composition including from about 1 wt-% to 20 wt-% of peroxycarboxylic acid, from about 10 wt-% to 50 wt-% of carboxylic acid containing a mixture of acetic acid, and octanoic acid, the acetic acid and the octanoic acid present in a ratio ranging from about 10 to 1 to about 1 to 1, respectively, from about 3 wt-% to 35 wt-% of hydrogen peroxide, and a balance of carrier wherein said peroxycarboxylic acid is the reaction product of the acetic acid, octanoic acid, and hydrogen peroxide.

Abstract: The invention includes compositions and methods for sanitizing ware without staining, spotting or corroding. In its most preferred mode, the method comprises the steps of washing the ware in an automated ware washing machine and rinsing the ware at either high or low temperatures with a sanitizing rinse composition. The destaining, sanitizing concentrate composition preferably comprises peroxyacetic acid, acetic acid, and hydrogen peroxide using higher levels of acetic and peroxyacetic acid and a lower level of hydrogen peroxide. The sanitizing rinse composition may preferably be used at a concentration of peroxyacetic acid of at least 30 ppm.

Abstract: The invention relates to an aqueous coating composition a film or barrier layer. The aqueous coating, in a pseudoplastic thixotropic mixture having a yield point, can be applied to surfaces in heated food preparation units. The composition can be easily applied to a variety of surfaces, and can advantageously cling to vertical or substantially inclined surfaces in order to form a barrier film or coating. The coating can result in a smooth uniform coating. The film, upon heating forms a barrier layer which can facilitate the removal of food soils which can form during food preparation activities after formation of the barrier film layer. The compositions of the invention can be used in methods for coating the interior heated surface of food preparation units by applying the aqueous material through a spray or other aerosol apparatus to form a clinging aqueous coating. Upon heating, the water from the coating can evaporate leaving an organic/inorganic film which can support baked-on food soil and promote easy removal. The compositions and methods of the invention entail the use of food safe materials approved for contact with comestible substances.

Abstract: A solid cast warewashing composition having improved soil removing properties is produced for use in automatic washing machines. A liquid detergent composition is cast and solidified in a mold. The solid cast detergent, surrounded on all but its upper surface by the mold, is used in automatic washing machines having a dispensing device designed to dispense a liquid aqueous detergent formed from the solid cast detergent using an impinging liquid spray. The liquid aqueous detergent flows out of the dispensing device generally simultaneously with its formation in the dispenser. The cast detergent composition includes at least about 0.1 wt.% of a selected nonionic surfactant, an alkali metal hydroxide, a sequestrant, water of hydration and optionally further an available chlorine source, a defoamer, or the like.

Abstract: Spray-on cleaners that can be delivered by pump or pressurized gas aerosol spray head have been known to cause respiratory distress in the form of a chocking mist. The chocking mist associated with aerosol use can be reduced or eliminated by formulating surface cleaning compositions that can be dispensed through a spray head resulting in an aerosol or mist droplet having a mean particle size greater than about 200 .mu.m. We have found that typical spray-on cleaners have a mean particle size less than about 175 .mu.m and, depending on the concentration and degree of irritation of strong base or strong acid components, can cause severe respiratory distress. Preferred thickeners have been found for use in the non-chocking aerosol or mist compositions.
