A breading machine incorporating the present invention for use with fresh or green bread crumbs for continuously coating a battered food product (P) having a frame (1) supporting an endless conveyor (2) on which food product (P) is disposed defining a food product conveyance path, and a rotatable drum type conveyor (25) disposed adjacent to the path and operable to receive fresh bread crumbs and to convey the bread crumbs into a hopper (45) for distribution to the food product conveyor (2) for coating the food product (P) carried thereon.

Said device has a buffer container (1) for holding the high-viscosity pasty substance, a feeding conduit (11), through which the buffer container (1) can be refilled with the substance, a pressure generator (2 to 5), which can pressurize the substance in the buffer container (1), a nozzle (10) arranged near the buffer container (1), a pressure detector (43) situated downstream of the pressure generator and a regulator (44). Said device makes it possible to monitor precisely the dose in the area adjacent to the nozzle (10).

In the process and device for applying liquid, optionally foamy impregnation and/or coating substances, the device parts (10a, 10b) effecting the coating operation are mounted floating and form a surface which is approximately parallel to the surface to be coated (14). Between the coating device (1) and the surface to be coated (14) a hydrostatic pressure is exerted so as to produce an impregnation, respectively homogenization effect of the coating layer.
