PROBLEM TO BE SOLVED: To provide a method for producing unconventional pickles that have a peculiar savoriness and high color retention, and contains a lot of useful physiologically active substances that show antihypertensive action.SOLUTION: Vegetables are soaked in rice-bran paste prepared by mixing rice bran and white fermented soybean paste.
Abstract:
PROBLEM TO BE SOLVED: To provide a new lactobacillus having a high production capacity of γ-aminobutyric acid (GABA), a method for producing the GABA and method for producing a GABA-containing lactic acid fermented food by using the lactobacillus, and a glutamic acid decarboxylase (GAD) and nucleic acid encoding the same obtained from the lactobacillus. SOLUTION: This new lactobacillus of Lactobacillus sp. L13 (NITE P-253) having a high production capacity of the GABA, the method for producing the GABA and method for producing the GABA-containing lactic acid fermented food by using the lactobacillus, and the GAD and nucleic acid encoding the same obtained from the lactobacillus are provided.
