Abstract:
PROBLEM TO BE SOLVED: To softly bake a rice cake by microwave heating in a state where the rice cake becomes soft without irregularly blowing up and is savory by browning, and to provide the delicious baked rice cake in a short time. SOLUTION: The rice cake 9 is covered by a shielding member 1 through which the microwave does not pass, and a transmission part 2 through which the microwave is transmitted, is mounted on the microwave shielding member 1. A heating element 3 highly absorbing the microwave and generating the heat is positioned at a transmission part 21 at a center of an upper face of the rice cake 9. When the microwave is irradiated, the rice cake 9 is heated by the heating element 3 and its surface is browned. The rice cake is heated and softened without browning, by the microwave at a transmission part 23 of a peripheral edge part and a transmission part 24 at a side part. Abstract:
PROBLEM TO BE SOLVED: To provide a freshly poundedly, soft, flavorful and delicious rice cake by microwave heating in a short period of time without irregularly swelling the rice cake. SOLUTION: The rice cake is covered with shielding bodies 41 and 42 provided in a body part 11 and a lid part 12 of a rice cake cooking vessel and preventing the transmission of the microwave. The shielding bodies 41 and 42 are provided with transmission parts 2 transmitting the microwave. The transmission parts 2 of necessary opening area are distributedly provided in necessary parts of the shielding bodies for uniformly heating the rice cake. The insides of the body part 11 and the lid part 12 are formed with sticking prevention bodies 3 preventing the heated rice cake from sticking thereto. The microwave shielding bodies 41 and 42 prevent the irradiated microwave from irradiating on the rice cake and the transmission parts 2 allow the microwave to transmit and irradiate the rice case, so that the rice cake whole body can be softened in a short period of time for being taken as foods. PROBLEM TO BE SOLVED: To provide a method for producing fruit juice by which formation of a self-prevention type dynamic membrane is eliminated when filtered and transparent fruit juice containing a water-soluble pectin can be obtained and to provide an apparatus used for the production method. SOLUTION: The method for producing the fruit juice comprises partially decomposing pectin in fruit juice with a pectolytic enzyme, clarifying and filtering the partially decomposed pectin with a microfilter (MF) membrane to obtain the transparent fruit juice containing a water-soluble pectin. The apparatus 11 for producing the juice is composed of a storage tank 1 for storing the juice, a circulation pump 2 for circulating the juice, a heat exchanger 3 for heating or cooling the juice, a MF membrane module 4 for filtering the juice and bypass piping 5 for by-passing the MF membrane module 4, and the apparatus 11 carries out partial decomposition of the juice and filtering of the juice after the partial decomposition. PROBLEM TO BE SOLVED: To provide a cooking vessel with which an electronically boiled egg can be easily produced via microwave heating in a short time with saved energy: and to provide a method for readily and safely producing high-quality electronically boiled egg with saved energy using the vessel. SOLUTION: The method for producing an electronically boiled egg comprises the following process: putting a shell egg in a cooking vessel provided with a heat generating material where material highly absorbing microwaves and generating heat is arranged so as to relatively uniformly come in contact with the egg shell, at the inside of a heat-resistant vessel; and irradiating the cooking vessel with microwaves to solidify the egg yolk and albumen of the egg with shell via microwaves. The cooking vessel is provided with a vessel main body and a lid, and comprises a heat-resistant vessel and the heat generating material highly absorbing microwaves to generate heat and arranged at the inside of the vessel so as to relatively uniformly come in contact with the egg shell.
