Abstract: The present invention relates to a method for improving preservability of wild vegetables through an intermittent heat treatment, and can improve the change and safety of quality which may occur in the distribution process as well as promote safety against contamination and decay caused by microorganisms. According to the present invention, the wild vegetables are subjected to an intermittent heat treatment, preferably first and second heat treatments, so that the wild vegetables can be stored for a long time without propagation of microorganisms; the destruction of nutrients can be prevented; and the stored wild vegetables having an inherent property thereof without a change in color can be used for a long time. Thus, based on the present invention, it is expected that production and consumption of microbiologically safe wild vegetables will be made possible.
