Abstract: Provided are a beverage composition containing a mulberry extract having an excellent anti-diabetic effect, and a manufacturing method thereof, which contributes to the increase of farmer's income. The beverage composition containing a mulberry extract is manufactured by the steps of: (1) adding 60-80ppm of a pectolytic enzyme or 400-600ppm of a non-starch polysaccharase based on the weight of crushed mulberry, reacting the admixture at 40-60‹C for 1-2hours, pressing and filtering the resultant to obtain a mulberry extract; (2) pressing and filtering crushed pear to obtain a liquid-phase component, diluting or concentrating the liquid-phase component to obtain a pear extract having the same sugar content as the mulberry extract; and (3) mixing the mulberry extract with the pear extract in a volume ratio of 10:1 to 20:1.
