    Abstract: PURPOSE: A method of culturing the mycelium of Fuscoporia obliqua using unpolished rice together with a mixture containing red ginseng meal, soybean meal, rice bran flour and wheat bran flour in the same ratio is provided. It has effects of preventing the generation of coagulation of unpolished rice during the addition of unpolished rice and promoting the growth of Fuscoporia obliqua mycelium. CONSTITUTION: Unpolished rice is soaked in water to a moisture content of 45± 2%(w/w), heated for 20min at 100deg.C and then cooled to 25±3deg.C. Thereafter, the cooked unpolished rice is mixed with 0.3 to 0.5%(w/w) of red ginseng meal having a particle size of 70 to 90 meshes and a moisture content of 8 to 10%(w/w) and sterilized for 90min at 121deg.C in a bottle, followed by inoculating it with Fuscoporia obliqua spawn. A mixture containing red ginseng meal, soybean meal, rice bran flour and wheat bran flour in the weight ratio of 1:1:1:1 is used instead of the red ginseng.

    Abstract: A method of cultivating selenium enriched bean sprouts by soaking beans in a sodium solution of selenium compounds and cultivating with a conventional method, or by soaking bean sprouts which are cultivated with a conventional method, in the selenium solution just before taking the bean sprouts from the warehouse is provided. It produces the titled product at low cost as compared to conventional method. To enrich or fortify bean sprouts with selenium, the beans are soaked in a sodium solution of selenium compounds for about 5 to 6hr and then cultivated with a conventional method. Or bean sprouts which are cultivated with a conventional method can be soaked in the selenium solution just before taking the bean sprouts from the warehouse. The selenium enriched bean sprouts are washed with water, heated at 90±1deg.C for 2 to 3min, dried with a conventional freeze drying method and ground to 50 to 80meshes. The bean sprouts powder having a moisture content of 8 to 12%(w/w) is formulated into an envelop, tablet or capsule.
