CONSTITUTION: A method for producing ripened onion extract comprises: a step of dipping onion in salt water to dehydrate; a step of adding anchovy sauce and glutinous rice powder to the onion and fermenting; a step of pulverizing onion mixture to produce onion mixture powder; a step of reflux-extracting the onion mixture powder; a step of filtering then compress-concentrating; and a step of freeze-drying the concentrate.
