    Abstract: PURPOSE: A method for measuring lipoxygenase activity is provided to effectively remove surfactant which interferes conjugated diene detection using ethanol and to accurately measure the lipoxygenase activity. CONSTITUTION: A method for measuring lipoxygenase activity comprises: a step of mixing a sample containing alpha-linoleic acid, surfactant, and lipoxygenase in a non-polar solvent and inducing reverse micelle formulation and enzyme reaction; a step of adding 30-90%(v/v) ethanol to the reactant and centrifuging; and a step of collecting supernatant and measuring absorbance at 234 nm. The non-polar solvent is isooctane. The surfactant is dioctyl sulfosuccinate(AOT). The sample containing lipoxygenase is derived from a plant containing lipoxygenase.
