The enzyme is easily purified because the protein derived from the mesophilic host cell can be easily removed by the simple heat treatment. CONSTITUTION: Novel thermostable beta-glycosidase tat β-gly derived from Thermus flavus AT-62 has the amino acid sequence of SEQ ID NO: 2, wherein the thermostable beta-glycosidase tat β-gly can maintain its activity at pH 7.0 and 70 deg. C for 70 hours or more, and has maximum enzyme activity at pH 5.0 to 6.0 and 80 to 90 deg. C. A gene encoding the amino acid sequence of SEQ ID NO: 2 has the nucleotide sequence of SEQ ID NO: 1.
