    Abstract: PURPOSE: Croaker roe production, breeding and a manufacturing method of dried croaker are provided to make dried croaker be a speciality and to increase additional income of breeding fisherman. CONSTITUTION: Croaker roe is artificially collected in every July and August, and fertilized by an abdomen oppressive method. The fertilized roe is hatched within 20 hours. The young of fishes are managed at the temperature of 15-28deg.C and bred for a year. The squamae are removed and the croakers are seasoned with sea salt 25% for 48 hours. The salted croakers are washed 3 times and dried by sea wind for 48 hours to manufacture dried croakers.

    Abstract: PURPOSE: A process of preparing dried brown croaker is provided by dry salting a brown croaker(Nibea imbricatus), curing and then drying. Whereby, the product is low in a fishy odor and contains fish protein excellent in nutrition. CONSTITUTION: A brown croaker whose scale is removed is dry salted with 20 to 30% by weight of bay salt, based on the fish weight, cured on the slightly inclined level ground for 2 days and then dried in the dark in which a sea wind is well passed though for 2 days after washing.
