Abstract: The present invention relates to a method to produce a red ginseng water extract with increased quality; a red ginseng water extract produced by the same; and a method to increase a ginsenoside content. According to the method to produce a red ginseng water extract, water is added to red ginsengs to firstly extract the red ginsengs at low temperatures to increase a saponin content; and the red ginsengs are secondly extracted at low temperatures.

Abstract: PURPOSE: An increasing method of the ginsenoside content inside a red ginseng water extract is provided to heat a main root, lateral roots, and rootlets of red ginseng inside an extractor containing water. CONSTITUTION: An increasing method of the ginsenoside content inside a red ginseng water extract comprises the following steps: cutting a main root, lateral roots, and rootlets of red ginseng; inserting the main root, the lateral roots, and the rootlets into an extractor containing water; and heating for 5~7hours at 94~96deg C to increase the total ginsenoside content of the red ginseng water extract.
