Abstract: A method for analyzing the activity of lipoxygenase by using a water-soluble substrate is provided to improve rapidness and accuracy of analysis by eliminating use of surfactant in the analysis process. The method for analyzing the activity of lipoxygenase by using the water-soluble substrate comprises the steps of: (A) reacting lipoxygenase with at least one substrate selected from 1-linoleoyl lysophosphatidylcholine, 1-linolenyl lysophosphatidylcholine and 1-arachidonyl lysophosphatidylcholine in buffer solution of pH 5-11; and (B) measuring absorbance of the mixed solution obtained from step(A) at 234 nm.
