Disclosed is a B-glucan containing fat and oil composition that contains B-glucans which have a weight average molecular weight of less than 500,000 and which are extracted from a gramineous plant, wherein the composition contains a B glucan having at least two kinds of bonds selected from a 1-2-B-D-glucopyranose bond, a 1-3-B-D-glucopyranose bond, a 1-4-B-D-glucopyranose bond, and a 1-6-B-D-glucopyranose bond. Also disclosed is a drug having a prophylactic action for a habitual disease containing the above B-glucan-containing fat and oil composition.
Abstract:
A beta -glucan-containing fat and oil composition of the invention which contains beta -glucan of microorganism origin or basidiomycete origin. The beta -glucan -containing fat and oil composition of the invention has beta -glucan uniformly dispersed in a food without worsening the texture, taste etc. of the food. The novel microorganism of the invention can efficiently produce beta -glucan which has a high activity and favorable qualities as beta -glucan of microorganism origin as described above from less expensive saccharides such as sucrose at a high production speed.

PROBLEM TO BE SOLVED: To provide a β-glucan composition with excellent effect in diabetes improvement, such as insulin secretion-promotion, blood sugar level rise inhibition, and good water solubility, and a production method to obtain β-glucan composition having such features by simple operations in a short time. SOLUTION: The β-glucan composition contains following (A), (B) and (C) components with the mass ratio of 10 to 85:10 to 85:5 to 60 (where (A)+(B)+(C)=100), where (A) is water-soluble β-1, 3-1, 4-glucan with a molecular weight of 500,000 or more, (B) is water-soluble β-1, 3-1, 4-glucan with a molecular weight of 20,000 to less than 500,000, and (C) is water-soluble β-1, 3-1, 4-glucan with a molecular weight of 500 to less than 20,000. PROBLEM TO BE SOLVED: To provide starch noodles which solve the problems of turbidness of boiling soup, escalation of bubbling, generation of boiling over, and reduction in weight of noodles (boiling loss) which are remarkable in starch noodles, especially in rice noodles, without changing the quality, especially the texture, of starch noodles.SOLUTION: Starch noodles is produced by adding barley flour, preferably barley flour containing 10-50 mass% of β-1,3-1,4-glucan. It is preferable that the starch noodles is rice noodles.
