Abstract: In an enzymatic reaction for isomerizing glucose into fructose with a glucose isomerase, a method is provided for converting glucose into fructose which is characterized by using calcium carbonate, magnesium carbonate an anion-exchange resin or an amphoteric-ion exchange resin as a pH regulator.
