Abstract: A process for removing unwanted odours from mixtures of fatty acid esters which, besides other components, contain the esters of highly unsaturated fatty acids, especially of highly unsaturated omega -3-fatty acids, such as eicosapentaenoic acid or docosahexaenoic acid, is characterised in that the mixture of fatty acid esters is treated with complex hydrides, in particular with sodium borohydride solution.
