A process is described for the preparation of 5-hydroxymethylfurfural (HMF), which comprises the following steps: provision or preparation of a starting mixture, comprising one, two or more starting compounds selected from the group consisting of hexoses, oligosaccharides comprising hexose units, and polysaccharides comprising hexose units, one, two or more organic salts with a melting point 200°C at 1013.25 hPa, optionally additionally one or more catalysts for the conversion of the one starting compound or at least one of the two or more starting compounds to 5-hydroxymethylfurfural (HMF), optionally water, optionally further substances, adjustment of reaction conditions such that an amount of the starting compound or starting compounds converts to HMF.

A process for preparing 5 hydroxymethylfurfural (HMF) characterized in that a) solutions (called starting solution hereinafter) comprising one or more saccharides and an organic solvent having a boiling point greater than 200°C (at standard pressure) (called high boiler for short) and water and a solvent having a boiling point greater than 60°C and less than 200°C (at standard pressure called low boiler for short) are supplied to a reaction vessel b) a conversion of the hexose to HMF in the presence of steam with simultaneous distillative removal of the HMF is effected in the reaction vessel and c) the distillate obtained is an aqueous HMF containing solution (called distillate hereinafter).

Procedimiento para la preparación de 5-hidroximetilfurfural (HMF), que se caracteriza porque a un recipiente de reacción se introducen a) soluciones acuosas (en lo sucesivo llamadas solución inicial) que contienen -una o varias hexosas y - un disolvente orgánico con un punto de ebullición superior a 200 °C (a presión normal) (llamado sustancia con un alto punto de ebullición) y - agua y un disolvente con un punto de ebullición superior a 60 °C e inferior a 200 °C (a presión normal, llamado sustancia con un punto bajo de ebullición), b) en el recipiente de reacción se efectúa una conversión de la hexosa en HMF en presencia de vapor de agua y simultáneamente una separación por destilación del HMF y c) como destilado se obtiene una solución acuosa que contiene HMF (en lo sucesivo llamada destilado).
