Abstract:
The present invention relates to compositions including peroxyacetic acid an d perxyoctanoic acid and methods for preventing microbial growth is aqueous streams including the step of applying a compostion of the invention to the stream. The compositions and methods can control microbial growth in aqueous streams used for transporting or processing food products.
Abstract:
Disclosed are methods of reducing a microbial population on a surface of a fruit or vegetable within an aqueous transport stream, comprising contacting the aqueous transport stream with an antimicrobial composition of a mixture of organic acids and a chelating agent. The composition typically comprising 35-45% acetic acid, 5-15% octanoic acid, 3-8% hydrogen peroxide, 8-16% peroxyacetic acid, 1-5% peroxyoctanoic acid and 0.1-2% chelating agent. Wherein the microbial population comprises one or more of Escherichia coli, Listeria monocytogenes, or Salmonella javiana.
