Abstract:
Un aparato para concentrar un producto de frutas- verduras, donde dicho aparato consta de: una unidad de concentración provista de una entrada, una salida y una pluralidad de módulos de membrana tubular conectados en serie; una bomba de husillo excéntrico de un solo eje conectada a dicha entrada de dicha unidad de concentración para suministrar el producto de frutas-verduras a dicha unidad de concentración; y otra bomba de husillo excéntrico de un solo eje conectada a dicha salida de dicha unidad de concentración para descargar el producto de frutas-verduras de dichos módulos de membrana tubular, donde dicho aparato sirve para hacer que el producto de frutas-verduras sea concentrado por ósmosis inversa haciendo que el producto de frutas- verduras fluya bajo condiciones de presión a dicha unidad de concentración.

Disclosed are dry tomatoes which have an excellent texture, flavor and appearance and can be conveniently produced, and processed tomatoes which are suitable as a starting material for producing the dry tomatoes. Processed tomatoes characterized in that a part of the cuticular layer or a part of the pericarp tissue together with a part of the cuticular layer have been removed; dry tomatoes characterized by being produced by drying the processed tomatoes as described above; a method of producing processed tomatoes characterized by comprising irradiating tomato surface with a laser beam and thus removing a part of the cuticular layer or a part of the pericarp tissue together with a part of the cuticular layer; a method of producing processed tomatoes characterized by comprising removing a part of the cuticular layer in tomatoes the bodies of which are not cut; a method of producing processed tomatoes characterized by comprising removing a part of the pericarp tissue together with a part of the cuticular layer in tomatoes the bodies of which are not cut while preventing the leakage of the fruit juice onto the surface; and a method of producing dry tomatoes characterized by comprising producing processed tomatoes by the preceding production method and then drying the processed tomatoes.

An apparatus for concentrating a vegetable and/or fruit product has a concentration unit having a plurality of tubular membrane modules (11) connected in series, a single-axis eccentric screw pump (31) connected to its inlet for supplying the product and another single-axis eccentric screw pump (61) connected to its outlet for discharging the product concentrated by reverse osmosis by the concentration unit (21). The product is supplied under a high-pressure condition such that the pressure at the inlet is within a specified range, and the apparatus is operated such that the pressure at the outlet is also within another specified range and the pressure difference between the inlet and the outlet be greater than a certain minimum pressure value. By a method of this invention, concentrated vegetable and/or fruit products with solid components approximately in their original forms can be obtained.
