    Abstract: PROBLEM TO BE SOLVED: To provide a liquid vegetable salt having low salinity and high mineral content and substancially containing no heavy metal harmful to human body, and to provide a method for producing the salt. SOLUTION: This method comprises collecting Salicornia, removing such foreign substances as sand, soil and mud or the like attached to the Salicornia through washing twice with seawater or saltwater, slicing or grinding the resultant. The thus obtained product is put into triple times water, then the resultant is heated at 100 deg.C for >=3 h to obtain an extract containing several kinds of component or the like e.g. minerals or the like contained in the Salicornia, the extract is put into a bag for filtration and pressed to recover all of the filtrate.

SOLUTION: This method comprises washing and slicing Salicornia, then extracting with hot water to obtain a hot water-extraction solution, drying the resultant, primarily ashing the dried product at 150-250 deg.C for >=30 m, secondarily ashing the resultant at >=500 deg.C for >=2 h, tertiarily ashing the resultant at >=700 deg.C for >=2 h and then grinding the resultant to obtain the objective uniform vegetable salt.
