The present invention concerns a recombinant yeast comprising a set of exogenous nucleic acids, with each nucleic acid encoding a polypeptide involved in the biosynthesis pathway of a vanilloid, said set of exogenous nucleic acids encoding a set of polypeptides selected in a group comprising: • a set of enzymes allowing conversion of an aromatic amino acid into a vanilloid; and • a set of enzymes allowing conversion of a dehydroshikimic acid into a vanilloid; and wherein said recombinant yeast is devoid of a functional gene adh6 encoding for an alcohol dehydrogenase, and wherein said recombinant yeast has a reduced ability to decarboxylate phenylacrylic acids, which encompasses that said yeast does not comprise a fonctional fdcI gene and/ or a functional padl gene.

The present invention relates to methods for producing vanilloid compounds in a recombinant host, and in particular for converting a protocatechuic aldehyde into a substantially pure vanilloid. It further relates to novel yeast strains that are suitable for producing such vanilloid compounds.
