Abstract:
A method for preparing a beverage through a capsule inserted in a beverage machine; the capsule comprising an enclosure containing one or more beverage ingredients, wherein a brewing fluid is introduced in the enclosure to brew the said one or more beverage ingredients, wherein a brewed liquid is filtered by a filtering wall and delivered from the capsule, wherein the filtering wall extends from substantially the bottom of the enclosure and said filtering wall is associated to an overflow wall that forces the brewed liquid to traverse at least one overflow aperture. The method is particularly suitable for brewing a tea containing capsule.

Abstract:
An improved filamentous fungi is disclosed that has an enhanced nutritional profile by utilizing pulsed ultraviolet irradiation. According to the invention, the vitamin D component of mushrooms and other filamentous fungi may be drastically increased with no deleterious affects on appearance with the use of pulsed UV radiation. Mushrooms so treated had up to 1800% DV in one serving of fresh mushrooms.

Abstract:
Methods are provided for obtaining phytoextracts from vegetation waters and pomaces coming from olive milling. Such methods may be based on combining physical-chemical and enzymatic pre-treatment methods, membrane tangential filtration and vacuum evaporation. Such methods allow eco-sustainable and efficient extraction of the active ingredients involved. Compositions resulting from such methods are also provided.
Abstract:
A method for producing yeast extract including 4-30% disodium inosinate and disodium guanylate (I+G), comprising a) providing a yeast cream including 8 wt. % or more of RNA, b) inactivating the yeast in the yeast cream, c) centrifugating the yeast cream and collecting a supernatant, d) degrading the supernatant with enzymes, e) heat-treating, and f) concentrating and drying the supernatant. The resultant yeast extract is natural, involves no additive, and has better flavor. The invention further provides yeast extract is produced by the method.
