Abstract:
Oils containing a triacylglycerol polyol ester and a non-glycerol polyol ester are described, as well as methods of making such oils. Methods for improving lubrication properties of a vegetable oil also are described.
Abstract:
The invention provides a trans fat replacement system that is a stable and shelf storable mixture of an edible oil and an expanded, low-density carbohydrate for use in preparing baked goods having a reduced trans fat content. Depending upon formulation and processing, the mixture can have a consistency ranging from generally granular to an almost paste-like consistency. The trans fat replacement system consists of at least one edible oil and an expanded, low-density carbohydrate having a bulk density less than about 0.4 g/cc. The trans fat replacement system can be used to reduce or eliminate the amounts of traditional fats used to make baked goods. In one representative formulation, the trans fat replacement system can take the form of a generally, paste-like mixture that is suitable for spreading and is especially useful for the preparation of laminated dough products such as biscuits and croissants.
Abstract:
Symmetrical polyols, polyol esters, polyesters, polyurethanes, triazoles, and polyvinylethers derived from glycerol and methods of making the symmetrical polyols, polyesters, polyurethanes, polyhydroxyvinylethers and triazoles are discussed. Also provided is a method of making serinol.

Abstract:
A process for modifying an unsaturated triacylglycerol oil, such as an vegetable oil stock, to enhance its fluidity and/or oxidative stability is provided. Lubricants containing a modified an unsaturated triacylglycerol oil and methods for their production and use are also provided.
Abstract:
Disclosed is a method for reducing the sterol, for example cholesterol, content of sterol-containing substances such as fats and oils. The method provides an efficient and cost effective process based on the affinity of cholesterol and other sterols for amphipathic molecules that form hydrophobic, fluid bilayers, such as phospholipid bilayers. Aggregates of amphipathic molecules are contacted with, for example, a sterol-containing fat or oil in an aqueous environment and then mixed. Following adequate mixing, the sterol-reduced fat or oil is separated from the aqueous separation mixture. Alternatively, the correspondingly sterol-enriched fraction also may be isolated from the aqueous separation mixture.
Abstract:
A process for modifying an unsaturated polyol fatty acid ester stock, such as an unsaturated triacylglycerol oil, to enhance its fluidity and/or oxidative stability is provided. The method includes reacting the unsaturated polyol fatty acid ester stock with cyclopropanating agent. Lubricants containing cyclopropanated polyol fatty acid ester and methods for their production and use are also provided.

Abstract:
Hydrogenated canola oils having improved oxidative stability are disclosed. These oils have relatively low levels of trans-fatty acids and saturated fatty acids, yet possess an oxidative stability of greater than 300 AOM hours. Such oils can be produced by hydrogenation of refined, bleached canola oil extracted from Brassicaceae seeds having elevated levels of oleic acid and reduced levels of polyunsaturated fatty acids. Brassica lines producing seeds having such fatty acid profiles are disclosed. Hydrogenated oils may be fractionated to obtain canola oils that are liquid at or below room temperature and have relatively low levels of trans-fatty acids and saturated fatty acids, yet have an oxidative stability of greater than 300 AOM hours.
Abstract:
Candle compositions are disclosed which include a high concentration of liquid oils, yet are solid due the incorporation of wax-monoesters; thereby enhancing the scope, quality and functionality of candles. The wax-monoesters may be obtained from natural plant based waxes, including rice bran wax. Candles based on the candle compositions and methods of making the compositions are also disclosed.
