Abstract: The disclosure relates to compositions and methods for reducing free asparagine concentration in the grain of wheat plants. The compositions comprise wheat plants, plant parts, plant cells, and seeds comprising a loss-of-function mutation in at least one endogenous ASPARAGINE SYNTHETASE 2 (ASN2) gene. The grain of wheat plants has reduced acrylamide-forming potential. Low acrylamide products produced from the grain are also provided.
