    Abstract: Storage stable high maltose starch conversion syrups having a minimum F.E. of 85%, a minimum D.E. value (dextrose equivalent) of about 50%, a maltose content of about 60 to 80% and a maltotriose content of 15 to 35%, and method for producing said syrups wherein a starch paste containing at least 5% by weight solids is saccharified with a maltogenic enzyme and amylo-1,6glucosidase.

    Abstract: THINNED HYDROLYZATES ARE PREPARED BY INITIALLY HYDROLYZING A PARTIAL HYDROLYZATE OF A D.E. LESS THAN 2.0 WITH ALPHA-AMYLASE AT 200* C.-212*F. AND CONTAINUING THE HYDROLYSIS THEREOF AT 185*-200*F. UNDER NON-RETROGRADING PROCESS CONDITIONS. THE ALPHA AMYLASE REQUIREMENTS NECESSARY TO PROVIDE THE THINNED HYDROLYZATES ARE SIGNIFFICANTLY REDUCED BY THE PROCESS. THE RESULTANT THINNED HYDROLYZATES EXHIBIT IMPROVED SACCHARIFICATION PROPERTIES AND RAPID FILTRATIONCHARACTERISTICS.
