PROTEIN-CONTAINING SINGLE CEL MICRO-ORGANISMS ARE PREPARED INTO TEXTURIZED PRODUCTS BY A PROCESS IN WHICH AN AQUEOUS SLURRY OF PROTEIN-CONTAINING MICROBIAL CELLS IS MIXED WITH AN ACID OR ALKALINE ACTIVATING AGENT TO ACTIVATE THE CELL MIXTURE AFTER WHICH THE ACTIVEATED MIXTURE OF PROTEIN-CONTAINING MICROBIAL CELLS AND ACTIVATING AGENT IS PASSED THROUGH AN ACID BATH, IF AN ALKALINE ACTIVATING AGENT IS EMPLOYED, OR THROUGH AN ALKALINE BATH, IF AN ACID ACTIVATING AGENT IS EMPLOYED, THE ACID BATH HAVING A PH IN THE RANGE OF ABOUT 3.5 TO 5.5 AND THE ALKALINE BATH HAVING A PH IN THE RANGE OF ABOUT 7.5 TO 10.5. THE TEXTURIZED PROTEIN PRODUCT PREPARED BY THE PROCESS IS SUITABLE FOR USE AS AN ADDITIVE TO OR A SUBSTITUTE FOR CONVENTIONAL FOODS. IN ADDITION, THE PROTEIN PRODUCTS PREPARED BY THE PROCESS ARE SUITABLE, FOR EXAMPLE, IN THE PREPARATION OF BIO-DEGRADABLE CONTAINERS, PACKAGING MATERIALS, AND UTENSILS.

IMPROVED QUALITY SINGLE-CELL PROTEIN FOOD MATERIALS ARE PREPARED BY EXTRACTION OF UNICELLULAR MICROOGRANISMS WITH AQUEOUS AMMONIA AT 90* TO 125*C. FOR FROM 5 TO 60 MINUTES. NUCLEIC ACIDS ARE REMOVED FROM THE CELLS WHILE THE PROTEIN CONTENT REMAINS HIGH.
Abstract:
Yeasts are grown aseptically by an improved aerobic fermentation process, employing an aqueous ethanolic substrate fortified with nutrient elements, preferably under oxygen-limited conditions. Fermentation is effected in a continuous manner in a zone maintained under super-atmospheric pressure. Micro-nutrients are added to the substrate separately from macronutrients as a sterile aqueous solution, preferably containing iron as ferric citrate. A preferred yeast is Candida utilis.

REMOVAL OF NUCLEI ACIDS WITHOUT SUBSTANTIAL REMOVAL OF PROTEIN MATERIAL IS ACCOMPLISHED BY LIMITING THE TREATING TIME TO ABOUT 5 TO 30 MINUTES.
Abstract:
Protein-containing single cell micro-organisms are prepared into texturized products by a process in which an aqueous slurry of protein-containing microbial cells is first mixed with a surface active agent to chemically promote partial leakage of inner cell components through the cell walls, after which the leaked inner cell components are separated from residual protein-containing cell debris and the residual cell debris treated first with a gelatinizing agent for a time sufficient to gelatinize the cell debris and then with a precipitating agent to induce texture formation in the gelatinized cell debris. The texturized protein products prepared by the process are suitable for use as additives to or substitutes for natural foods and for use as bio-degradable containers, packaging materials or utensils.
