    Abstract: Aqueous protein dispersions obtained from vegetable sources are subjected to successive pressure and cavitation cycling (e.g, centrifugal homogenization) at temperatures below the protein heat denaturization and under slightly alkaline pH's (e.g., pH 7.0-8.0) to provide a high NSI product. These high NSI products may be dried to provide a vegetable seed product having functional properties and utility similar to milk proteins. Buffered salt extracts from such spray-dried products reveal a predominant restructuring of the protein constituents into high molecular weight protein aggregates. Low NSI soy concentrates obtained by aqueous alcohol extraction processes are converted into a high NSI product possessing many of the desirable functional attributes of soy isolates plus those of milk proteins.

    Abstract: Water-soluble protein hydrolyzates and high-amylose starches provide an improved whipping system for aerated confections such as nougats, grained marshmallow, etc. The total whipping agent and sweetening agent requirements may be sterilized and aerated to a specific gravity of 0.75 or less. The high-amylose starches and protein hydrolyzates are film-formers and provide a supportive matrix for the aerated confections. The aerated confection permits the use of a broad range of sweetening agents without necessarily relying upon crystallized sugars for textural properties. High, moisture-containing, aerated confections with improved stability against moisture-loss may be obtained by substituting crystallizable sugars (e.g. sucrose) with sweetening agents which have a higher degree of humectancy.

    Abstract: Aqueous emulsions containing lipophilic sizing agents, are used for sizing paper. Volatile nitrogen containing bases, such as ammonium hydroxide and tertiary amines, are used as emulsifying agents to aid in forming aqueous emulsions of lipophilic sizing agents. Preferred lipophilic sizing agents are heterocyclic organic compounds which are formed by the reaction of a dicarboxylic acid anhydride and a long chain hydrocarbon.

    Abstract: A water-absorbent starch product is made by a method in which an aqueous dispersion of starch, water, free-radical initiator and ethylenically unsaturated monomer, which monomer consists essentially of monomer having a boiling point of at least 100 DEG C, is simultaneously polymerised and dried at a temperature above 100 DEG C to provide a dry, water-absorbent starch product or a precursor thereof. Effective water-absorbent starch products, essentially free from water-soluble salts and free-radical initiator contaminants and containing a high level of functional water attractant groups, may be directly manufactured without the need for further refining or chemical modification.
