Abstract: PURPOSE: A composition containing green tea polysaccharide for preventing oral bacteria is provided to minimize side effects and to apply to food, medicinal product, and cosmetic industry. CONSTITUTION: A composition for suppressing oral bacteria contains green tea polysaccharide as an active ingredient. A method for producing the green tea polysaccharide comprises: a step of removing chlorophyll and polyphenol of low molecular weight using solvent; a step of performing hot water extraction of water soluble active ingredient from green tea residue; and a step of isolating green tea polysaccharide through ultrafiltration and ethanol precipitation from the extract. The oral bacteria are Streptococcus mutans or Prevotella intermedia. The composition is temperature sensitive sol-gel phase transitional oral formulation.

Abstract: A method for processing green tea using ultra-high pressure technology is provided to produce green tea which is resistant contamination by microorganism or various germs and preserves deodorizing degree or flavor for a long time. Green tea leaves are processed at the temperature of 20~45‹C and the pressure of 200~600Mpa for 1~15 minutes. The distilled rate of amino acid and catechin is low in case of pressure less than 200Mpa, and green tea leaves are lumped in case of pressure over 600Mpa. In case that the pressure is 600Mpa or greater, the temperature is controlled lower than 60‹C in order to prevent oxidation of active substances of green tea leaves such as polyphenol.

Abstract: A fermented green tea and a preparation method thereof are provided to reduce astringent and bitter taste of fermented green tea and to remove smells of various bacteria by aging and fermenting green tea using a food microorganism under the optimal condition. A method for preparing fermented green tea comprises the following steps of: adding water to green tea leaves until the moisture content becomes 30-60% on a total weight basis and inoculating bacteria to the green tea leaves; fermenting the inoculated green tea leaves under the condition of 7~35°C and 4.0~8.0 of pH for 1-10 days; and aging the fermented green tea leaves for 7-15 days. The aging step is performed at 5~20°C with basalt laying on the fermented green tea leaves. The bacteria are selected among Saccharomyces cerevisiae, Lactobacillus casei, Bacillus subtilis, Lactobacillus bulgaricus, Lactobacillus plantarum and Leuconostoc mesenteroides.
