PURPOSE: An anti-diabetic functional mulberry extracted liquor and a manufacturing method thereof are provided to reduce blood sugar level, serum insulin level, serum cholesterol and neutral lipid level. CONSTITUTION: A manufacturing method of anti-diabetic functional mulberry extracted liquor comprises the following steps: adjusting the pH of extracted liquid as 5.5 and the sweetness degree as 6 by putting the alive mulberry into potassium metabisulphite containing ionized water; adjusting the pH as 3.6 by adding citric acid and edible sulfuric acid solution; adding sugar(18 Brix) in order to adjust the alcohol concentration as 12% and the sweetness as 24 Brix and agitating thereof and adding yeast; primary fermenting for 2-3 days at 23 deg. Celsius by adding ionized water; compress filtering with non-woven fabric when the specific gravicy becomes 1.02(4.6 Brix) by maturing for 4 days; adding sugar and dissolving thereof and secondary fermenting for 10 days at 18 deg. Celsius; crude filtering after centrifuging at a speed of 8000 rpm for 30 minutes and maturing for 6 months at 18 deg. Celsius; and adjusting the alcohol concentration as 6% and diluting the mulberry wine(alcohol concentration 12%) and acetate agitating and culturing thereof by inoculating acetobacter.

CONSTITUTION: A polyphenol compound is one of compounds having chemical structure 1-11 which are originated from mulberry seed. An isolation refining method of the polyphenol compound comprises the following steps: obtaining mulberry seed oil and defatted meal by compressing the mulberry seed; organic solvent extracting degatted meal; and silica-gel, sephadex LH-20, ODS-A column chromatographing ethyl acetate fraction. The functional food for antioxidant contains mulberry seed originated polyphenol compound.

PURPOSE: Mulberry jam and a producing method thereof are provided to use high-quality mulberry syrup obtained from assorted mulberry to produce the jam. CONSTITUTION: A producing method of mulberry jam comprises the following steps: assorting and washing mulberry; mixing the washed mulberry and sugar in a weight ratio of 1:1; sealing, fermenting, and aging the mixture for 3-9 months, and filtering the mixture using a 20mesh sieve to obtain mulberry syrup; mixing the mulberry syrup with mulberry syrup flesh, and heating the mixture at 70 deg. C for 10 minutes before stirring; removing stems from the stirred mixture, and refining the mulberry syrup flesh; adding pectin to the refined mulberry syrup flesh; and coagulating the mixture before stopping the heating process and adding citric acid and vitamin C and sterilizing the mixture.
